Tasting: Its perlage is persistent and its bubble is unique and enveloping: this is our Alta Langa Sivà DOCG metodo classico brut. Its bouquet is a perfect combination of the typical aroma of bread crust, due to the yeasts, and the scent of white flowers, such as jasmine, coming from the chardonnay grape.
We carry out a direct and gentle pressing of the grapes with fermentation of the must at low temperatures (16°C).
Selected yeasts are used for both tank and bottle fermentation.
As it is a classic method, we have a re-fermentation in the bottle at 15°C with a minimum of 36 months on the fermentation yeasts.
